Many of the terms used in this website are drawn from centuries-old traditions, combining agricultural knowledge, spiritual practice, and ecological stewardship.

Terroir

The unique combination of soil, climate, topography, and human practice that defines the character of a wine

Dry Farming

Traditional cultivation method relying solely on rainfall, avoiding artificial irrigation

Must

The juice obtained from crushed or pressed grapes before or during fermentation; depending on the process, it may be in contact with skins, seeds or stems.

The first surviving Athonite Typikon, issued in 972 by Emperor John I Tzimiskes and signed by Athonite representatives; it regulated the organisation of monastic life.

An EU geographical-indication category in which a wine's registered name and reputation, quality or other characteristic are attributable to its geographical origin, under an approved product specification.

The EU network of protected sites established for the conservation of specified habitats and species. Site designation does not itself certify the farming practice of an individual vineyard.

An interpretive, non-regulatory expression for the relationship between place, cultivation and Athonite religious culture; it is not an official wine classification.

Terraced Step Planting

Cultivation on constructed or retained level steps on sloping ground. Terraces can reduce slope length and influence erosion and water movement, but their performance depends on design and maintenance.
